Besan Protein-rich Porridge 

 

Here is another delicious ayurvedic breakfast or even dessert

  • Excellent Gluten Free source of protein

  • Easily digestible

  • Great for kids needing more protein…yummy too

  • KAPHA -balancing: good when there is sluggish lymphatic system & water retention

Ingredients

1 Tablespoon of ghee
2 tsp poppy seeds*
2 Tablespoons besan flour
1/2 cup organic milk, any you like
4 threads of saffron (optional)
1 tsp raw organic sugar
1/2 tsp cardamom powder
1/2-1 cup warm filtered water

Directions

1. Warm ghee in a small saucepan.

2. In another small pan warm milk with saffron.

3. Add poppyseeds to ghee. Roast until fragrant.

4. Add besan/ chickpea flour and stir quickly to ensure lumps don’t form. Roast until it darkens a little (caramel tan colour) and aromatic.

5. Take off the heat and gradually add the warmed milk stirring quickly so lumps don’t form.

6. Return to heat and cook on medium heat. It will keep thickening. Add warmed water stirring it in.

7. Stir in sugar and cardamom.

8. Take off the heat and let sit for 5 mins, it will thicken as it cools.

Optional additions:

- Chopped organic DATES or sultanas (minerals)
- 1 Tab of SESAME SEEDS (calcium, nervous system suppprt)
- Chopped ALMONDS (best if soaked overnight and peeled)

This creamy porridge makes a delicious dessert, just add another teaspoon or two of sugar if you like.
Roasted slithered almonds will top it off for dessert…..just don’t add fresh fruit that won’t metabolise easily with the heaviness of the proteins.

Notes:
Kapha body type, minimise ghee.

- Indian Besan (Gram flour) is the flour of brown chickpeas*
