Besan Protein Pancakes
- Best for Pitta & Kapha 
- Light easily digestible meal for heavy Kapha constitutions, water retention and a sluggish lymphatic system 
- Great for kids, especially when you want to boost their protein. Add fillings of your choice such as sauteed julienne carrot or avocado 
- Good for respiratory conditions such as asthma and bronchitis conditions 
- Gluten free 
- Serves 4 
Ingredients
1 heaped cup Besan (black gram) flour
1 Onion, finely chopped
1 tsp Ajwain seeds (available at Indian grocers)
1 tsp Cumin seeds
½ tsp Turmeric powder
Pinch Salt, as per taste
1-2 cups Water
Ghee or quality oil for cooking
Garnish: Fresh chopped coriander and lemon wedges. Chutney such as coriander mint chutney.
Directions
- In a large bowl mix flour, onion, ajwain, cumin seeds, turmeric and salt. 
- Add water and mix well to make a batter ensuring no lumps of flour remain. It should be quite runny. 
- Heat a cast-iron fry pan and drizzle on 1 teaspoon of ghee. 
- Spoon 2-3 tablespoons of batter onto the pan and spread to make a pancake. 
- Shallow fry for about a minute. 
- Flip over and cook on the other side for about a minute. Spoon a little more ghee or oil around the sides of the pancake to make it crispy. 
- Flip it one more time and cook for about 10 seconds. 
- Serve hot with coriander, lemon wedges and chutney.
