Beetroot Porridge
Whaaat? Sounds strange but this porridge is truly delicious and packed with nutrients, is a very energising & nourishing start to the day!
- Excellent blood-builders and stimulate blood flow: although not high in iron, they contain iron of a very high quality that helps build healthy blood 
- Liver tonic - strengthens the liver 
- Great for cleansing sludgy bile so it can move from the gallbladder for proper digestion 
- Detoxify blood and renew it with minerals so if skin irritation is an issue for you, eating beetroots (greens and root) or juice can help 
- High in nitric oxide that helps naturally cleanse the blood 
- Beetroots help to nourish and replenish reproductive tissue directly 
Ingredients
2 tsp Ghee
1 Medium organic beetroot
¼ cup Desiccated/ shredded coconut (optional)
½ cup Water
¾ cup Unhomogenised organic/bio dynamic milk
½ tsp Cardamom ground
½ tsp Ginger ground (optional)
1 tsp Organic raw sugar or jaggery to taste
Some pecans or walnuts
Directions
- Peel and grate the beetroot. 
- Melt the ghee in a medium sized pot. 
- Cook the grated beetroot in the ghee over medium heat for about 10 minutes, until the beetroot is quite tender. 
- Add the milk and water. Turn up the heat and bring to the boil. 
- Once boiling, continue to cook over a low-medium heat until the beetroot is very soft and this mixture is a porridge-like consistency. At this point I like to add 1/4 cup of desiccated or shredded coconut. 
- Finally, add the cardamom and sugar and cook for another minute before serving. 
- Garnish with pecans or walnuts. Those with a Vata dosha dominance add 1 tsp ghee.
