Ayurvedic Chai Tea
Ingredients
- 1 ½ cups water 
- 2 tsp Freshly grated ginger 
- 1 tsp Fennel seeds 
- 7-9 Cardamom pods 
- 1 stick Cinnamon 
- 3 – 4 Cloves 
- 1 Star Anise (optional) 
- ¼ - ½ tsp Ajwain (use in winter or autumn, digestive) 
- 3 -4 seeds Coriander (use in summer, cooling) 
- 1 tsp Raw sugar, per person or to taste 
- 1 tsp Black tea, loose leaf or rooibos per person 
- 2 cups unhomogenised organic milk 
Directions
- Add water and ginger to a small pot and place on medium-high heat. 
- Place spices in a mortar & pestle and grind briefly. 
- Add spice mix to water and bring to boil. 
- Add sugar and bring back to boil. 
- Add tea leaves and immediately add milk. Bring back to boil. It’s important to add milk straight after the tea, so that tannins from tea are not released. Tannins have a drying effect. 
- Simmer for a minute and serve hot. - Serves 2 (generously)
